Day 5 of 7: Christmas Cookies - Tis the season for baking!
Orange Cranberry Cookies
Beat together:
1 cup sugar
1 1/2 sticks butter, softened
1 egg
Sift together and then add to the creamed mixture above:
2 cups flour
1 1/2 tsp baking powder
1/2 teaspoon baking soda
Then add:
1/2 cup chopped dried cranberries
1 tablespoon freshly grated orange peel
Roll dough into 1" balls and roll in sugar mixture below:
1/2 cup sugar and 1 1/2 teaspoons grated fresh orange peel - mix together well, use your fingers if necessary to blend the sugar and orange rind, and then roll the dough balls into the sugar mix. It's not the same if you use dried orange rind...it's much better with the moist, freshly ground orange rind!
Bake at 350* on prepared pans (I use parchment paper) for 7-10 minutes Cool 1 minute before removing from cookie sheets to a cooling rack.
I substitute a cup for cup gluten free flour mix and these turn out really delicious! One of my personal favorites!
