Day 2 of 7: Christmas Cookies - Tis the season for baking!
Grandma Bette's Apricot Thumbprint Cookies. Definitely a family favorite!
These cookies are really simple and easy to make and if you sift the flour they are so delicately delicious! (If you aren't a flour- sifter- kind of a baker they are still good they will just have a crunchier texture.

1 pound softened butter
4 cups sifted all-purpose flour (Note: I used Gluten-Free flour which makes them a little more delicate to handle - all-purpose flour will be easier to use)
1 3/4 cup sugar
1 egg yolk
Apricot preserves or jam (I thin a bit with hot water to make it easier to drop onto thump prints)
Powdered sugar for dusting the tops when they are cool!
Mix the ingredients and drop by teaspoon onto cookie sheets lined with parchment paper. Press your thumbprint into the top of each mound and fill with the apricot preserve ~ 1/2 teaspoon. Bake at 375* for 10-15 minutes. Edges will be slightly browned. Let the cookies sit for a few minutes before transferring to a cooling rack. Once cool sprinkle tops with sifted powdered sugar.


I bet they taste WAAAAAY better with Homestead fresh eggs!! Holy moly do you have a lot!
